Up until around the turn of the millennium, a Coen-friendly actor was a character actor, someone who could disappear into a role without conjuring up memories of the person performing that role. But that's not what's happening in Hail, Caesar. A cynic might speculate that the Coens have "gone Hollywood," swapping out weirdo character actors for leading-men types.
